Story Behind the Coffee:
This coffee starts with harvesting perfectly ripe cherries, ranging in altitude from 1850 – 1900 MASL from the Volcan region and reading 21-23 on BRIX meter. These cherries are carefully selected for a second time before depositing them on a modular 3 tiered, raised African bed system designed by Jamison Savage. The cherries are frequently turned and agitated inside parabolic dry-houses where, heat, humidity, and airflow are carefully controlled to ensure even and consistent drying within the grain.
