The Story Behind the Coffee:
Situated in an area where tea is more often the crop of choice, the Kii factory is a shining example of what coffee can achieve when grown in optimal conditions. As a member of the Rungeto FCS cooperative, this factory produces exceptionally high quality coffees each year. Every year, hundreds of smallholders contribute their ripe cherries to this factory, where meticulous manual sorting and grading take place. The multi-step process, from dry fermentation in tanks to the final raised-bed drying, ensures each bean's flavor potential is fully realized.
