About the Bean:

Las Flores is a celebrated farm in Acevedo, Huila, run by Johan Vergara, one of the region’s most forward-thinking producers. The farm was originally planted with traditional varieties such as Castillo and Catimore. In 2013, Johan began transforming the entire operation by introducing high-quality varieties and improving farming practices, which elevated the cup quality to exceptional levels. Today, Las Flores is known throughout southern Huila for its innovation and consistency.

This lot showcases Johan’s dedication to experimentation and detail. Fully ripe cherries are hand-picked and floated to remove imperfections, then fermented twice: first for 36 hours in bags, followed by another 36 hours in their own mucilage that has been enriched with a panela-fed culture. After fermentation, the coffee is rinsed twice, given a quick thermal shock at 60°C, and gently dried in dehumidifiers for five days to reach ideal moisture.

The result is a beautifully clean and complex coffee that reflects both the precision and passion behind every step at Las Flores.
