El Paraiso 92, overseen by the innovative Wilton Benitez, introduces a unique thermal shock process to the already distinct Geisha varietal. This method includes a series of meticulous steps like manual harvesting, sterilization with ozonated water and ultraviolet light, a precise thermal treatment of cherries, and a carefully monitored anaerobic fermentation. This process, enhanced with controlled pH and brix adjustments, culminates in an exceptional coffee, distinguished by its intricate processing and remarkable flavor profile.
